Savoury Pancakes
Pancakes do not have to be sweet. Savoury versions — French buckwheat galettes, Korean kimchi pancakes, Indian dosas, English-style cheese-and-ham — make a full meal. Most use the same batter principles as their sweet counterparts, just with herbs, cheese, vegetables, or meat folded in or piled on top.

Savoury pancakes — questions
Can you make pancakes without sugar?
Absolutely — savoury pancake batter usually leaves out sugar entirely or uses just a pinch. Replace it with a generous pinch of salt and you have a neutral base for any savoury filling.
What goes in a savoury pancake?
Cheese, ham, mushrooms, spinach, herbs, smoked salmon, eggs, leeks, and caramelised onions all work well. The classic French galette complete pairs ham, gruyere, and a fried egg.
What is a galette?
A galette is a savoury crepe made with buckwheat flour, traditional to Brittany. Buckwheat gives a nutty flavour and slightly grey colour, and it is naturally gluten-free.
Are savoury pancakes a Pancake Day tradition?
Less so than the sweet version, but they fit the spirit perfectly. Shrove Tuesday is about using up rich pre-Lent ingredients — eggs, butter, cheese, milk — and savoury pancakes do exactly that.
