Pancake Day is one meal. Make it count.

Lemon juice and caster sugar. Rolled tight. The one nobody argues about.

Crispy bacon, real maple syrup, and a knob of salted butter. Stack it high.

Warmed Nutella, sliced banana, and a dusting of icing sugar.

Brie, fig jam, and crushed walnuts on a savoury crepe. Serve with white wine.

Smoked salmon, cream cheese, capers, and a squeeze of lemon.

Vanilla ice cream, salted caramel sauce, and crushed shortbread.

Strawberries, hundreds and thousands, and a drizzle of chocolate sauce.

Ricotta, honey, toasted pine nuts, and fresh thyme.

Set up four or five topping stations and let everyone build their own. Works for any group size. Print small labels for each topping.

One pancake from each tradition: British (lemon sugar), French (crepe suzette), American (maple butter), Japanese (souffle), Russian (blini with soured cream), Indian (dosa), Ethiopian (injera), and Korean (pajeon).

Split the table. Half the pancakes go savoury (cheese, mushroom, smoked salmon). Half go sweet (fruit, chocolate, cream). Vote on a winner.

Toss a pancake across the room (garden if possible). Whoever flips the most without dropping wins the first pancake. Very traditional, very chaotic.
